🥗 Recipe: Summer Quinoa Bowl with Lemon‑Tahini Drizzle
A light, vibrant bowl that’s easy to make, nutrient-dense, and full of flavor:
Ingredients:
1 cup cooked quinoa (cooled)
½ cup cherry tomatoes, halved
½ avocado, sliced
½ cup cucumber, chopped
¼ cup chickpeas, drained + rinsed
Handful of arugula or baby spinach
Optional: crumbled feta or grilled salmon
Lemon‑Tahini Drizzle:
2 tbsp tahini
Juice of 1 lemon
1 tsp maple syrup
1 clove garlic, minced
2–3 tbsp water (to thin)
Pinch of salt
Directions:
Build the bowl: quinoa → tomatoes + cucumber → chickpeas → greens → avocado.
Whisk tahini, lemon, maple syrup, garlic, and water until smooth.
Drizzle over the bowl. Add feta or salmon if desired.
Sit outside, savor slowly, and listen to your body.
