🥗 Recipe: Summer Quinoa Bowl with Lemon‑Tahini Drizzle

A light, vibrant bowl that’s easy to make, nutrient-dense, and full of flavor:


Ingredients:

  • 1 cup cooked quinoa (cooled)

  • ½ cup cherry tomatoes, halved

  • ½ avocado, sliced

  • ½ cup cucumber, chopped

  • ¼ cup chickpeas, drained + rinsed

  • Handful of arugula or baby spinach

  • Optional: crumbled feta or grilled salmon

Lemon‑Tahini Drizzle:

  • 2 tbsp tahini

  • Juice of 1 lemon

  • 1 tsp maple syrup

  • 1 clove garlic, minced

  • 2–3 tbsp water (to thin)

  • Pinch of salt

Directions:

  1. Build the bowl: quinoa → tomatoes + cucumber → chickpeas → greens → avocado.

  2. Whisk tahini, lemon, maple syrup, garlic, and water until smooth.

  3. Drizzle over the bowl. Add feta or salmon if desired.

  4. Sit outside, savor slowly, and listen to your body.
